We love soups year round! They are filling, a great way to get a lot of veggies in, and are easy for meal prepping – perfect for my fellow spoonies, busy moms, or anyone who doesn’t want to worry about making a healthy lunch or dinner every day. We make a batch on Sundays and enjoy for lunch all week. Excited to share our favorite vegetarian tried-and-trues that are super quick to make and are easily adoptable to vegan or gluten-free.
